Preparation

Note: Preheat oven to 425 °F (220 °C). Place pizza crust on baking sheet or pizza pan. Spread Caramelized onions over crust. Top with Buttered Sautéed mushrooms, walnuts and blue cheese. Bake in the centre of oven for 8-10 minutes or until cheese is bubbly. Let stand 5 minutes before cutting. Caramelized Onions: In large skillet, melt butter over medium heat; add onions, sugar and salt. Cook, stirring occasionally, for 30 minutes or until onions are very soft and caramelized. Set aside to cool. Servings: 1 1/4 cups (310 mL)Cooking time: 30-35 minutesPreparation time: 4 minutes Butter Sautéed Mushrooms: In large skillet, melt butter over medium-high heat; add mushrooms, garlic, thyme and salt. Cook stirring occasionally, for about 8 – 10 minutes or until mushrooms are tender and liquid is evaporated. Season with black pepper to taste. Set aside to cool. Servings: 1 cup (250 mL)Cooking time: 7-11 minutesPreparation time: 3 minutes

Tips: Caramelized Onions: Make ahead and cool, cover and refrigerate for up to 24 hours. These Caramelized onions are a great way to heighten flavour to many dishes. Besides using on this pizza, serve as a side dish with roasted meats, added to mashed potatoes or use as a filling for omelets or quiche. Cooking Tips: Vidalia or Spanish onions would work well in this recipe. If the onions are starting to brown too quickly, reduce heat to medium-low. Butter Sautéed Mushrooms: Make ahead, cool, cover and refrigerate for up to 8 hours. To provide a unique flavour use a selection of mushrooms: shiitake, oyster and crimini. These varieties combine well with white button mushrooms and are wonderful as a steak or burger topping. Cooking Tips: Save time on preparation by purchasing pre-sliced mushrooms and minced garlic in jars or frozen cubes. Use 1 tsp (5 mL) chopped fresh thyme in place of dried. Turn this recipe into a main meal by tossing with cooked pasta and grated Canadian Parmesan cheese.
