Ingredients

  • 1 1/2 cups whipping cream
  • 1/2 pkg Bella Casara Mascarpone (475g) , room temperature
  • 1/3 cup icing sugar
  • 1 tsp vanilla
  • 1 1/2 cups brewed coffee, chilled
  • Approximately 24 store bought lady fingers
  • Cocoa powder for dusting

Instructions

1. Using beaters in a medium sized bowl, whip the whipping cream till stiff peaks. In
another medium bowl, using the beaters, whip cheese, sugar and vanilla. Using a spatula
gently fold whipping cream into the cheese mixture, once fully combined, set aside in the
refrigerator.

2. Pour coffee in a shallow dish. With a 9×9 pan ready, dip 12 lady fingers in the coffee. Do
not soak the fingers, just a quick dip on each side will do. Layer approximately 12 lady
fingers in the bottom of the pan.

3. Pour half of the mascarpone mixture on top of the lady fingers and smooth with a spatula.
Repeat by adding the final 12 lady fingers on top, making sure to dip them in the coffee
first.

4. Once all the lady fingers are in the dish, add the remaining mascarpone mixture on top
and smooth with a spatula. Dust the top with cocoa powder. Let sit in the refrigerator for
at least 4 hours, preferably overnight.
