Pasta with Vodka Sauce
and Buffalo Bocconcini

Pasta tossed in a rich, velvety vodka sauce made with ripe tomatoes, cream, and a hint of spice — then finished with Bella Casara Buffalo Bocconcini for that luscious finish. Ingredients

  • 3 tbsp olive oil
  • 1 medium spanish onion
  • 3 cloves of garlic, crushed
  • 1/4 cup tomato paste
  • 1 (796 mL) can whole peeled tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup vodka
  • 1 lb of pasta like campanelle, farfalle or penne
  • 1 pkg Bella Casara Buffalo Mini Bocconcini (180g)

Instructions

1. In a large saucepan add oil and heat on medium heat. Add onions and garlic and cook
until softened, about 12 to 15 minutes.

2. Add tomato paste and coat onions, once tomato paste is well combined add the peeled
tomatoes. Bring to a simmer, stirring occasionally until sauce thickens slightly, about 10
minutes. Add cream and combine.

3. Carefully (avoiding splashes) blend sauce with an immersion blender until very smooth,
about 3 to 5 minutes. Season with salt and pepper. Add pot back to a low heat and add
vodka to simmer.

4. In a medium sized pot, cook pasta in salted water just until it is al dente, about 8 minutes
depending on the pasta shape chosen. Strain pasta, reserving 1/2 cup of cooking water.

5. Add pasta to the sauce with the reserved water. Stir to fully incorporate.

6. Divide pasta into bowls and equally portion with bocconcini balls. Serve with chili
flakes, salt and pepper.
