A delicious Burrata Caprese Sandwich

Ingredients

For Tomato Confit

  • 3 garlic cloves, peeled
  • 1 tsp butter
  • ½ cup cherry tomatoes
  • 1 sprig fresh rosemary
  • 1 tsp kosher salt

Additional Ingredients

  • 1 package Bella Casara Burrata 250g
  • 1 baguette
  • 2 tbsp store-bought basil pesto
  • 3 tbsp fresh arugula
  • 1 tsp chili oil
  • 2 tsp fig glaze / balsamic glaze

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small baking dish, combine cherry tomatoes, garlic cloves, butter, rosemary, salt.
  3. Roast for 20–25 minutes, or until tomatoes are soft and blistered. Let cool slightly.
  4. Lightly toast slices of Baguette with butter using a brush add the butter and using a pan toast the baguettes until crisp and golden.
  5. Spread a generous layer of basil pesto on toast.
  6. Add a handful of arugula.
  7. Tear open the burrata and place on top.
  8. Spoon over the roasted tomato confit with some of the garlic and infused oil.
  9. Sprinkle chili oil.
  10. Drizzle with fig glaze for a sweet finish.
  11. Serve immediately while the Burrata is still creamy and the bread warm.
